Banana Oatmeal Chocolate Chip Muffins

These tasty muffins are super versatile in regards to ingredients. While I recommend the recipe bellow for best results, I have made them successfully many different ways. You can switch up the flours for all wheat or all white. You can also use whatever types of oats you have on hand . The almond meal can be replaced with pecans or walnuts- just make sure they are very finely ground. Enjoy!

Ingredients

Dry Mix
1 1/2 cups white flour

1 cup whole wheat flour

1/2 cup old fashioned oats

1/2 cup quick oats

1/2 cup almond meal/almond flour (If you don’t have any on hand- finely ground almonds or your favorite nut

1/2 cup brown sugar

1/2 cup white sugar

2 1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

Wet Mix

4 ripe bananas

2 eggs

1 cup unsweetened almond milk

1 tablespoon vanilla

1/2 cup vegetable oil (or neutral oil of choice- sometimes I use coconut oil)

1 cup mini chocolate chips

Directions

1- Grease 24 muffin tins (or use liners) and preheat oven to 350

2- Combine all dry ingredients in a large bowl and mix well with a wire whisk.

3- In a blender combine the bananas, almond milk, eggs, oil and vanilla. Blend until smooth mixture is well combined.

4- Fold banana mixture into dry mixture. Stir until combined.

5- Fold in mini chocolate chips.

6- Pour into 24 greased muffin tins

7- Bake for 18-20 minutes until toothpick inserted comes out almost clean (a few moist crumbs are ok). Be careful not to over cook or the muffins will be dry.
