Maple Apple Cinnamon Oatmeal Cookies

Ingredients

Wet Ingredients

1/2 cup coconut oil

1/2 cup brown sugar

2 eggs

1/4 cup maple syrup

1 teaspoon vanilla

1/2 teaspoon almond extract

1 green apple- peeled and grated

Dry Ingredients

1 3/4 cup whole wheat flour

1 teaspoon cinnamon

1/2 teaspoon salt (I use reedman real sea salt)

1/4 teaspoon all spice

1/4 teaspoon pumpkin pie spice

2 teaspoons baking powder

1/2 teaspoon baking soda

Additional Ingredients

3/4 cup quick oats

3/4 cup old fashioned oats

1/2 cup coconut flakes (optional but I love them)

Directions

  1. Beat coconut oil and brown sugar together until smooth. (I use my Kitchen Aid)

  2. Add eggs and beat until somewhat light and fluffy (it’s not going to get as light as butter), then add maple, vanilla and almond extract. Mix until combined. Fold in apples.

  3. In a separate bowl combine dry ingredients with a wire whisk.

  4. Fold dry ingredients into the wet mixture, mix until combined with wooden spoon or a few turns of your kitchen aid with the cookie paddle.

  5. Fold in the oats and optional coconut flakes

  6. Shape into round balls and place onto cookie sheets. Depending on how big you make them it will make 18-20 cookies.

  7. Bake at 350 for approximately 11-12 minutes, until outside edges begin to brown and the middle is set.

  8. Let cool completey before serving.

Pretty enough to serve to for crowd and maybe even healthy enough to have for breakfast with an egg.
