Cobb Salad Bar

Who doesn’t love a good “build your own dinner”? With a busy house full of go-go-go, I am always looking for quick and healthy ways to keep both the kids and adults happy and full. There’s no fancy recipe here but rather just a reminder of how chopping up veggies and using a Costco chicken can really turn into a great dinner. Another go-to weeknight meal in the Orme household.

Ingredients

1 Costco rotisserie chicken (or leftover chopped chicken), pulled or chopped

1 package turkey bacon (cooked and chopped- see instructions bellow for my simple quick oven method)

Large bowl of spinach, kale, mixed greens or lettuce of choice (I love to mix a few- whatever is in the fridge)

6 hard boiled eggs, peeled and chopped.

1 cup diced/shredded/crumbled cheese of choice (cheddar, jack, feta, goat, blue).

5 or more chopped veggies of choice that you know your family will eat (our go-to’s are broccoli, colored bell peppers, cucumbers, carrots, etc).

1-2 types of fresh or dried fruits (apples and cuties and dried cherries are my go-to)

1 nut topping of choice

Salad Dressing- your favorite healthy homemade or store bought dressing. If I am not going to make the dressing Trader Joes refrigerated dressings and Tessamaes are my favorite store-bought options. Consistently tasty, minimal ingredients, low in sugar.

Directions

Prep all ingredients and place on table or counter in a buffet style (as shown) . Let dinner guests build their own delicious salad.

**PRO TIP- I usually prepare the chicken, turkey bacon, eggs and cheese earlier in the day and have them ready in the fridge. In fact you can prepare this entire meal ahead of time- so handy!

**For the Turkey Bacon- Place bacon on a foil lined cookie sheet in a single layer. Bake at 400 for 10-12 minutes depending on how you want it cooked. We like it crunchy so I typically got for 12 minutes for the salad.
