Magic Granola Cookies

I’m calling these Magic Granola Cookies because they need a special name, they are that good. I use the word favorite a lot, but really, this is my real new favorite cookie.

Magic Oatmeal Granola Cookies 

Ingreidents

1 cup coconut oil

2 cups brown sugar (you can reduce to 1 1/2 for a lower sugar option)

4 eggs (at room temperature)

1 teaspoon real vanilla extract

3 1/2 cup flour (you can sub half for whole wheat if desired)

3/4 teaspoon salt (I use redmond real salt)

2 teaspoons baking powder

1/2 teaspoon baking soda

2 cup Oats

1/2 cup dried cranberries

1/2 cup rasins

1/2 sliced almonds

1/2 cup unsweetened coconut flakes

**Feel free to do heaping cups of any of your favorite toppings or switch up the type of dried fruit/nuts. These are also great with semisweet chocolate chips.

Directions

1. Preheat oven to 375 and line a baking sheet with a silpat mat or spray. 

2.  In a mixing bowl beat the coconut oil and brown sugar (I use my Kitchen Aide). Beat for about 2 minutes, until smooth and creamy. Add the eggs and beat until fluffy. Add vanilla and mix to combine. 

3. In a separate bowl combine flour, soda, salt, baking powder and cinnamon with a wire whisk, mix well. 

4. Slowly combine the flour mixture into the coconut oil mixture until flour is incorporated. With a wooden spoon mix in the oats and toppings. Be careful not to over mix.

5. Roll cookies into 2 dozen (1 at a time) equal size balls and place on lined baking sheet. Bake cookies for 9-10 minutes. I like mine more chewy and my husband likes them more crunchy so I typically (in my oven) bake 1 dozen for 9 minutes 30 seconds (chewy) and then the second batch for 10 minutes 30 seconds (more crunchy but not dry).
