Spicy Sweet Potato, Red Lentil and Kale Stew
Ingredients
6 cups chopped sweet potatoes
2 cups red lentils
4 cups chopped kale
2 yellow onions, diced
4 carrots, chopped
4 teaspoons minced garlic
2 32 ounce containers chicken broth
2 teaspoons boullion paste
3 tablespoons olive oil
Salt & pepper to taste (see instructions for tips)
2 teaspoons garlic powder (divided)
1/2 teaspoon chili flakes
Directions
In a large stock pot heat olive oil over medium heat.
.Add onions and a pinch of salt, sauté until onions begin to tender.
Add garlic, sauté for another minute, being careful that it doesn’t burn.
Add sweet potatoes and carrots, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 teaspoon garlic powder.
Sauté for 5 minutes over medium heat, stirring regularly, until sweet potatoes are cooked almost through.
Add broth, bouillon paste, 1 teaspoon garlic powder, chili flakes and lentils and let soup simmer for 10-15 minutes, until lentils are cooked and vegetables are tender. Add kale, simmer for 3-5 more minutes until kale is wilted. Taste, add more salt and pepper as needed. Add more chili flakes if you want your soup spicer.
