California Salmon Bowl (Paleo friendly)
Paleo Salmon Bowl
This recipe is great for meal prep. I like to make 4 of these ahead of time and have them ready for a quick and healthy lunch or dinner. You can mix and match with your favorite toppings as desired.
Ingredients
2 cups baby kale or mixed greens
1/3 cup roasted yellow potatoes (see recipe)
1 hard boiled egg
2 ounces smoked salmon of choice (I love Trader Joes Varieties)
1/4 sliced avacado
1-2 tablespoons capers (also from Trader Joes)
1-2 lemon wedges
Sprinkle of favorite seasonings- sea salt, fresh cracked pepper and Trader Joes “Everything But The” are pictured.
Drizzle of Avocado oil or extra virgin olive oil (if desired)
Directions
Assemble bowl and enjoy.
*If you assemble ahead of time keep the salmon in a separate baggy.
