Mango Citrus Quinoa Salad

Ingredients

For the quinoa-

1 cup dry quinoa

2 cups chicken broth

Zest of 1 lime

2 teaspoons lime juice

1 tablespoon butter or coconut oil

For the salad-

1 fresh mango, diced. (You can use frozen in a pinch, just let in thaw before use).

3/4 cup chopped cilantro (use less if you aren’t a cilantro lover but it’s great with the full 3/4 cup)

1 cup red bell pepper, chopped

4 tablespoons finely chopped red onion

For the vinaigrette-

3 tablespoons olive oil

1/3 cup orange juice

3/4 cup mango

1 tablespoon sugar

1/4 teaspoon salt

Blend all vinaigrette ingredients well in a blender.

Directions

Make the quinoa

Place all of the quinoa ingredients in a stock pot and stir well as the mixture heats towards a boil. Once mixture begins to bowl, stir well and turn heat to low so that the quinoa continues to simmer. Once the liquid has absorbed turn off the heat. Cover and let rest for 10 minutes.

While quinoa is cooking chop the vegetables, cilantro and mango and make the vinaigrette.

Let quinoa cool for 10 minutes and then lightly fluff with fork. Transfer quinoa to large bowl and toss with mango, bell pepper, onion and cilantro. Once incorporated drizzle vinaigrette over salad and mix to combine.
