Black Bean Salad with Lime Vinaigrette

Quick and easy to throw together. This salad is tasty and filling and the fresh lime vinaigrette is a great touch. You can enjoy it as is as a salad or side or turn it into a main dish by adding avocado and your favorite protein. I also love meal prep with this salad. It will last all week in the refrigerator too.

Black bean Salad with Lime Vinaigrette

Ingredients

4 cans black beans, drained and rinsed well

2 cups frozen or fresh corn (fresh is great when you make in the summer time)

1 large red bell pepper, chopped

1 bunch of cilantro, finely chopped

1/4 cup red onion finely chopped

Fresh Lime Vinaigrette

Juice from 2 large limes

1/3 cup vegetable or olive oil

1 teaspoon sea salt (or real redmond salt is my favorite)

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1-2 Tablespoons sugar or honey (you can leave it out but the sugar is a super tasty balance to the tart lime. I usually just go for it and add the 2 tablespoons sugar unless I am on a no sugar kick)

Directions

1)Combine all salad ingredients, set aside.

2) For the vinaigrette- In a mason jar with lid shake all ingredients well and toss onto salad.

3)Taste salad and add more salt and pepper if needed.

Tip- Serve cold or room temp. This salad keeps great in the fridge for 5 days. I love it for meal prep and will often have it for lunch over a bed of greens with avocado and protein.
